Thanksgiving Oven Roasted Potatoes with Rosemary and Garlic

Ingredients (serves 10)

3 pounds small new red potatoes, scrubbed and dried
1/2 cup extra-virgin olive oil
6 to 7 cloves garlic, crushed
1 1/4 teaspoon Sea Salt
1 tablespoon fresh or 1 teaspoon dried rosemary

Directions

Preheat the oven to 350 degrees F.
Pare a narrow strip of peel from the middle of each potato. In a large bowl mix the oil, garlic, and rosemary; add the potatoes and toss well. Transfer the potatoes to a shallow baking pan and roast until potatoes are tender when tested with the tip of a knife. Serve hot. These can also be chilled and served with fried chicken or ham.

Japanese Crab and Cucumber Salad Recipe

This Japanese Crab and Cucumber Salad recipe is from the Bonneville NASCAR Widows Club

INGREDIENTS:
4 unpeeled cucumbers, thinly sliced
1 tablespoon salt
1 can (6 ounce size) crab, or use fresh

***Dressing***
1/4 cup light soy sauce
1/8 cup rice wine vinegar
1/2 tablespoon sesame oil
1/4 cup brown sugar

DIRECTIONS:
Mix the cucumbers with the salt.

Place in a colander, and let drain for about 45 minutes.

Rinse the cucumbers and drain well.

Mix with the crab.

Make a dressing of the light soy sauce, rice wine vinegar, sesame oil, and sugar.

Toss with the crab and drained cucumber, and serve.

 A Tasty Beef Stew Recipe for NASCAR Widows

Here is a tasty beef stew recipe from the Show Low NASCAR Widows Club.

 Tasty Beef  Stew Ingredients

• 3 tablespoons olive oil
• 3 pounds beef stew meat, cut into 1-inch pieces
• 2 teaspoons kosher salt
• 1 teaspoon cracked black pepper
• 3 tablespoons unsalted butter
• 1 pound button mushrooms, quartered
• 2 cups roughly chopped yellow onions
• 2 cups sliced carrots, (1-inch slices cut crosswise on a diagonal)
• 2 celery stalks, roughly chopped
• 1 tablespoon roughly chopped garlic
• 4 tablespoons all-purpose flour
• 4 1/2 cups veal or beef stock, at room temperature
• 4 tablespoons tomato paste
• 1 sprig fresh thyme
• 1 sprig fresh rosemary
• 1/4 teaspoon ground allspice
• 3 to 4 cups 1-inch dice russet potatoes
• 1 cup frozen green peas, thawed
• 2 tablespoons chopped fresh parsley leaves
• Steamed white rice or buttered egg noodles, for serving

Directions
Set a Dutch oven or deep pot over medium-high heat.
Add 1 tablespoon of the olive oil to the pot and season the beef with the salt and black pepper, being sure to toss the meat well to evenly cover with the spices.
Add 1/3 of the beef to the pot and cook until browned on all sides, 2 or 3 minutes per side.
Remove the beef from the pot and set aside.
Add 1 tablespoon of the remaining olive oil to the pot along with half of the remaining meat and cook again until browned.
Set aside and repeat with the remaining tablespoon of oil and remaining beef.
Set aside.

Add the butter and mushrooms to the pot and cook, stirring occasionally, until well browned, about 3 minutes.
Add the onions, carrots and celery and saute until onions are softened and lightly caramelized, about 3 minutes.
Add the garlic and cook for 30 seconds.
Sprinkle the flour over the vegetables and cook, stirring, for about 3 minutes.
Add the stock, tomato paste, thyme, rosemary, allspice and browned beef and bring to a boil.
Reduce the heat to a simmer, partially cover the pot, and cook, stirring occasionally, until the meat is tender, about 1 hour.
Add the potatoes to the stew and partially cover the pot with a lid.
Continue cooking until the potatoes are very tender, about 30 minutes.
Remove the lid and discard the thyme and rosemary stems.
Add the peas and parsley to the stew, stir well to combine, then remove from the heat.
Serve hot, with either steamed white rice or buttered egg noodles.

Here is a great desert we had at our Independence Day family gathering yesterday – Fried Ice Cream recipe and made by Anne B

Ingredients:

6 Cups (before crushed) frosted flakes

1 1/2 tsp. cinnamon

3/4 cup brown sugar

Optional Ingredients:

1 cup chopped walnuts

1/2 cup coconut

Directions:

Mix above ingredients

Add l//2 cup butter, melted

Mix above ingredients, until crumbly

Cut 1/2 gallon of vanilla ice cream into 12 sections

Roll ice cream in crumbly mixture. FREEZE, a few hours before serving.

Serve with chocolate and/or carmel syrup and whipped topping.

Hi NASCAR Widows,

Summer time fun is only a short moment away. So make sure that you plan ahead for the best deals and meals and then visit our Speed Shopping page for a treat for yourself.

This recipe has been a favorite in our household for several years.

Ingredients:

6 pounds pork baby back ribs

1/2 teaspoon salt

1/2 teaspoon pepper

1/4 teaspoon garlic salt

1/4 teaspoon dried oregano

1/4 teaspoon onion powder

1/8 teaspoon cayenne pepper

BARBECUE SAUCE:

1/4 cup ketchup

1 tablespoon prepared mustard

1/2 teaspoon cayenne pepper

1/2 teaspoon salt

1/4 cup honey

1/2 cup brown sugar

Directions:

Clean and drain ribs.

Pat ribs dry with paper towels.

Combine the seasonings; rub over ribs.

Prepare grill for indirect heat, using a drip pan.

Place ribs over pan; grill, covered, over indirect medium heat for 1 hour, or until tender, turning occasionally.

In a small bowl, combine barbecue sauce ingredients.

When grilling is complete, brush barbecue sauce over ribs; grill, covered, over medium heat 10-15 minutes longer or until browned, turning and basting occasionally.

Yields approximately 5 servings.

Hi NASCAR Widows,

Here is Sidney’s family style Cinco de Mayo treat.

Ingredients:

1 lb chicken breasts, chopped

1 each medium green, red, and yellow peppers, chopped

1 medium onion, chopped

2 tablespoons oil

3 cups chicken broth

2 cups frozen corn

1 cup uncooked brown rice

1 cup green enchilada sauce

1/4 cup canned chopped green chilies

1/4 teaspoon salt

1 cup shredded Mexican cheese blend

1 cup sour cream

Mince chives

Tortilla chips

Directions:

In a large pan over medium heat cook, and stir the chicken, peppers, and onion in oil until tender.

Stir in broth, corn, rice, enchilada sauce, chilies, and salt.

Bring to a boil.

Reduce heat, cover, and simmer for 35-40 minutes.

Remove from heat.

Stir in cheese and sour cream until cheese is melted.

Serve with chips and chives.

Hi NASCAR Widows,

Here is Kaylyn’s favorite birthday treat!

This recipe is already doubled to fill an oval crock pot. Don’t waste, drain liquid from cans into crock pot. Cans are 15 oz unless otherwise specified.

Ingredients:

2 lbs of lean ground beef, cooked in fry pan then added

2 cans of Light Red Kidney beans

2 cans of Dark Red Kidney beans

2 cans of White beans

1 can of Hunt’s Tomato Paste

1/2 of large yellow onion chopped and slightly cooked

1 small can of diced Ortega’s Roasted Green chili’s

1 small can of diced Ortega’s Jalapenos

1 McCormick Original Chili packet

1 Western Family Chili packet (or your favorite)

1 12oz bottle of La Victoria Hot Salsa Brava

1/4 teaspoon Cayenne

2 cups of Light Brown Sugar

1/4 teaspoon Cumin

1/2 cap Red Pepper (or more to suit your preference)

Directions:

Cook ground beef in separate pan, drain

In crock pot, mix all other ingredients

Add cooked ground beef to crock pot mixture

Cook on high for three hours (five hours on low)

Add sprinkle of cheese when served, if desired

Serve with chips

Rates a   “10″   on the taste meter

Here is an easy and tasty taco soup recipe. Its been a family favorite for a long time.

 Ingredients:

1 pound ground beef (browned with onions)

1 small onion, chopped

1 green pepper, chopped

1 15oz can kidney beans, undrained

1 12oz can corn, undrained

1 28oz can (1 qt) chopped/pureed tomatoes

4 tablespoon salsa

1 tablespoon parsley

1/2 pkg taco seasoning (about 2 tablespoons)

Directions:

Mix and simmer for 30 minutes.

Can serve with cheese, sour cream, and corn chips.
